Blended oats
Well my kids are pancake lovers and I can't say I blame them. However, I was tired of feeding them processed food every morning for breakfast. I am not saying that they don't eat processed foods, but everything in moderation...right?
So I decided I needed to come up with a way to make pancakes that would be healthier and really fill their tummies with something yummy but good for them! I was so happy when my whole oat pancakes were a hit!!! Go Mommy!!!
Ingredients
1 1/2 c of blended steel cut oats3 tsp sugar (coconut sugar or white sugar)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 c milk
2 T lemon juice
1 egg
2 T melted butter
1 tsp vanilla (optional)
cooking spray
Directions
Pour lemon juice in milk, stir and set aside.In a separate bowl add blended oats, sugar, baking powder, baking soda, and salt. Mix together.
Melt butter in the microwave. Approx. 30 sec.
Crack egg in milk/lemon mixture and whisk. Add melted butter and whisk.
Add the milk mixture to the oat mixture and stir just until combined.
Heat griddle and lightly spray with cooking spray.
Pour batter on hot griddle (1/3 c per pancake) flip when bubbles appear.
Serve with your favorite syrup! Or you can make your own!
